What's for Dinner? - The Recipes Thread

Now we'll find out how good my English really is.  :-\

Shepherd's Pie (German Version)
Preparation time: app. 1 hour

You'll need (for two persons):

1 glass (650 g) marinaded red-cabbage
250g minced meat (I prefer lamb, but it should work with beef and pork too)
600 g potatoes
2 small onions
200 ml sour cream
some milk
50 g grated Cheddar
Worcester-sauce
Thyme
Marjoram
Salt
Pepper

How to do it:
Peel and rinse the potatoes and boil them in slightly salted water for 20 minutes.
Pour out the water
Add the sour cream and mash the potatoes
The mash is supposed to be creamy, almost runny, so add milk if the consistence is too compact.
Season to taste by adding salt and pepper

While waiting for the potatoes:
Peel and chop the onions
Give the minced meat into a hot pan (minced meat usually has enough fat, so it's not necessary to add more)
Fry and stir for about 2 minutes
Add the onions and fry for another 2 minutes

Reduce heat

Add 1 teaspoon each of thyme and marjoram and stew for 2 minutes
Season to taste with salt and pepper
Add the red cabbage and mix it with the minced meat
Season to taste with 1 - 2 teaspoons of Worcester-sauce
Stew for another 5 minutes

Pour the red-cabbage - meat mix into a casserole
Evenly spread the mashed potatoes onto the red cabbage
Strew (?) the Cheddar on top

Put the casserole into the heated (185° C) oven for about 20 - 25 minutes

I will try this out this week and report on my results.  Have to convert all the amounts.. but it's good practice :)  THANK YOU FOR SHARING!  Any others?  I have a mean "Venison Chili" if any one is interested I'll post that recipe?

Just to be an English pedant - Shepherd's Pie is always lamb or mutton as a Sheep Herder would not have cattle. For beef it would be Cottage Pie however I'm not too sure what it is called with pork though.

Minced pork? Can't say I've ever considered that. Sounds weird! Stick to lamb/beef. As Dave explained that dictates the name and both are classics. But pork? Nah! That's for pork pies.

What is venison...? :-[ First time I saw this was in a video game (Skyrim) just a week ago (of course, I could use a dictionary :bag:).

Basically "game meat". It's just about any piece of meat from an animal killed through hunting. At least, that's what I was told in the past.

I'm digging it out.  I have it memorized but want to post it properly.  In this case I am referring to "DEER"  You can use any game meat, but a good cut of Summer Sausage Deer Meat grilled right is what's called for.

I'll get it up on here.

Big Tim's FIREHOUSE Venison Chili

2 lbs. coarsely ground venison
1 lbs. Ground Chuck (80/20)
1/2 c. vegetable oil
2 c. chopped onions
2 cloves garlic, minced
2 lg. green pepper, cut in strips
4 tbsp. chili powder
4 tsp. sugar
5 1/2 c. whole tomatoes
2 c. tomato sauce
2 1/2 c. water
1/2 tsp. salt
2 c. kidney beans
2 c. chili beans

Brown venison and ground chuck in vegetable oil.
Add onions, garlic, and green pepper.
Cook 5 minutes, stirring constantly.
Add chili powder, sugar, tomatoes, tomato sauce, water, and salt.
Simmer 4 hours.
Just before serving, add kidney beans and chili beans. Serves 8 - 10.

There is a very similar recipe on Cooks.com for this called Texas Venison Chili.  Less ingredients and a little simpler if your interested. 
On a personal note, I make this in a crock pot and generally let it simmer longer than 4 hours.  It infuses the meat and ingredients better.

Please note the "German Version" I, of course intentionally, put in brackets.

Come to think of it, this recipe would probably work with mixed minced venison (just learned a new word, so I have to use it to burn it into my brain-cells) too.
Probably replacing the Cheddar by lingonberry-jam.

Mind you, it's only "Honorary", so you are not automatically allowed to invade your neighbour's garden.
On the positive side: It doesn't mean you'd have to forget everything you know about humour.

Actually, looking at that recipe, I would use the lingonberry jam as a replacement for the sour cream instead. Cheddar and lingonberries would meld well together, but not sour cream. The tartness of the lingonberries would clash with it, and make the mixture a little too sharp.
